DC - October 2013 to Present 4.5 Million in Catering Sales, Private club established 1878 Director of Operations, Wolfgang Puck Catering at The Newseum Wash. DC February 2012 to October 2013 14+ Million in Catering Sales Director of Catering & Operations - Restaurant Associates at the U.S. Capital Vistor Center. Dec 2008 to March 2012 1.2 Million Catering Sales. I was the sole catering staff, sales generated solely by me Owner/Manager - Opened restaurant in San Jose, Costa Rica, El Torreon, a 126 year old historical adobe house converted to restaurant with an outdoor garden and terrace. Accomplishments were: * Featured in three major South American magazines, profiled twice in special Christmas issue 2006, for Profile, Casa Galleria, and Mama Joven. * Reviewed in La Nacion, Costa Rica's major newspaper * Hosted a private dinner for visiting Spain delegation with Costa Rican President Pacheco and staff. * Catered weddings, First Communions, major company parties, Republican's Abroad, Democrat's Abroad, and New-comers Women's Club. * Featured in the Costa Rice Dining Guide, rated the 25th best restaurant of 100 in San Jose. As General Manager of Windows, a $14 million-plus a year catering and food service company, accomplishments have included Operations and Banquet Management, HR Management and Payroll & Financial Management. Plan and execute all aspects of large catered events for major clients such as Sallie Mae, Mobil, Honeywell, the State Department, National Gallery of Art, The Freedom Forum, Heritage Foundation, and Wolf Trap Center for the Performing Arts. Serve as chief liaison with outside vendors such as florists, musicians, and equipment rental companies. Some the events I have supervised and executed included: Annual Georgetown Steeplechase Races a full-service catering event for 3000 guests. The event consisted of 20 company tents, each with its individual theme and food fair. Responsible for the supervising of set-up of tents as well as booking of all staff along with the assignments of staff for event. RESUME OF CARLOS ROBLES Diplomatic Dinners at the State Department honoring Heads of State. Events for Secretary of State Colin Powell and Secretary of State Madeline Albright consisted of event set-up and execution. For seated dinners would instruct staff on service whether it be Formal, Butler, French or Protocol Service. It was important in all events that the set-up was impeccable with all details covered. Presidential Inaugural Dinners For President Bush and President Clinton, French Service dinner for 1500 guests at the Corcoran Gallery of Art. Consisted of set-up of all equipment for the seated dinner along with booking of staff and assignments for service, along with the supervision of timing of service for a smooth service between courses. Major fundraisers for organizations such as Wolf Trap Center for Performing Arts and the Corcoran Gallery of Art. Set-up of all equipment for the seated dinner and receptions with booking of all staff, as well as supervising the events during it execution. Democratic National Committee and Republic National Committee Responsible for the staffing all events. National Gallery of Art Exhibit Openings One of the openings consisted of 2000 guests for Citibank. The complete main floor of the National Gallery of Art West building. Was responsible for set-up, staffing and assignment duties for all staff. Many events have required over 100 staff and included 1000-1500 guests. HR Management. Managed personnel department, handled day-to-day issues including health insurance, worker's compensation and on-site incidents at events. Interviewed subcontractors and identified skills. Used computer database to track skills and performance of all personnel (wait staff, bartenders, kitchen prep, chefs, and sales). Clients include corporations, government and nonprofit agencies and individuals. Payroll & Financial Management. Oversee bi-weekly, semi-monthly and monthly payrolls for 175 in-house staff and 1000 subcontractors, ensuring transmission of accurate information to payroll contractors. Oversee Accounts Payable/Receivable with a volume of 1200 invoices per month. Worked closely with the company's Controller to develop sales, cash flow and other financial reports. Liaison with clients, staff, and insurance company to troubleshoot following events or deliveries.
