As you can see, I have worked with a variety of tastes and styles in a variety of settings - from New York seafood to St. Martin Island Creole. My expertise lies in the start up of new restaurants, developing recipes and setting menu standards. From preparation and supervision to design and development, I handle my kitchens with low food cost control and the utmost efficiency. Further opening experience at upscale restaurants like Blue Water Grill and Dock's has made seafood my specialty. I was especially proud when as Executive Chef for John Clancy's, Zagat Survey reviewed us as the best seafood in New York.
