SUMMARY OF QUALIFICATIONS * Over 2 ? years' experience in a managerial role in the banquet, food and beverage industry, supervising up to 7 kitchen workers preparing lunches and dinners for banquets up to 650 guests, private parties and corporate functions, ensuring that all food was prepared and staged in a timely manner in dining areas, meeting and/or exceeding all client and guest expectations * Proficient with some aspects of workforce development including training, delegating work orders, providing leadership and motivation, monitoring all work activities for quality, expediency, and safety, conducting performance evaluations, and consulting with upper management for employee status/progress reports * Over 20 years' experience as a cook, line cook, or sauté cook in fine, casual, short-order, and banquet settings, preparing and cooking food for breakfasts, lunches, and dinners and preparing a variety of cuisines, mainly American, Italian, Oriental, and more * Experienced retaining quality employees through sound Team Building concepts, excellent communications, and respected leadership skills * Experienced using all kitchen equipment, tools, and various food processors * Experienced operating convection ovens, standard ovens, warmers, broilers, salamanders, steamers, and grill tops (flat and flame) * Performs inventory management, rotating stock in coolers and freezers by date/time stamps, and places orders for purchases to resupply stock of food and supplies, forecasting for sufficient supplies, accounting for seasonal volume surges * Uses warmers and sets-up and breaks down steam tables for buffet-style dining * Operates commercial dishwashing machines during short-staffed situations, keeping kitchen well-supplied with clean pots, pans, utensils, etc., and serving staffs supplied with clean dishes, cups, saucers, silverware, and more * Multi-tasks efficiently, works well in a fast-paced setting, detail-oriented, and completes projects/assignments on time or ahead of critical deadlines * Strong communications, math, analytical and problem-solving skills * Dedicated, follows directions, calculates ingredient mixtures for several or for up to 650 people, and learns new techniques quickly * Familiar with using computers, Windows, Internet research, and email * Works well independently, with little to no supervision, or collaboratively in a team environment
