My original culinary training originated when I was young working in my aunts restaurant. Then I moved forward with the realization that cooking is my true passion. After this I moved forward with more in depth training; which covered many areas, such as food and beverage, banquets, Sous Chef, as well as Executive Chef. The result is that I know first hand what to expect and what can go wrong; there are no surprises and no excuses. After realizing that being a Chef was really my heart’s desire, I attended an accelerated 2 year program at Scottsdale Culinary Institute in Arizona. The courses covered every aspect of the restaurant business. In particular, I obtained an excellent understanding of the operations in a restaurant, financial responsibilities, and creating a team-oriented staff. I pride myself on always seeking ways to improve my staff, the kitchen, and myself. In the Executive Chef position at El Padrino, I worked with the owner to create something beautiful out of a dirt floor and four walls. It is easy to design a kitchen that has all the bells and whistles when there is no concern about the size of the kitchen. In a restaurant, however, every square foot used in the kitchen is one less square foot available for paying diners. The owner and I collaborated on successfully creating an effective, smooth flowing kitchen that could produce the most meals in the least amount of space.
