Executive Chef at Peter Scott's Rated Five Star, Fine dining restaurant, night club. One of the top five restaurants of Central Florida. February 1997 - 1999 Responsible for creating and implementation of all menus for restaurant, banquets and outside catering events. Reduction of food and labor cost maintaining below budget. We were reviewed by Scott Joseph, Restaurant Critic, Orlando Sentinel and was rated Excellent for Taste and Presentation. Was photographed with my food presentation on the 1-4 billboard. Restaurant Forum magazine interviewed me and photographed my food presentation and profile.
