Executive Chef at DoubleTree/Hilton (Hilton.com) A resort hotel with 750 rooms, multiple food outlets. 60,000 square ft. of banquet event space. February 2003 - 2005 Responsible for Culinary team, Receiving and Purchasing, Stewarding staff. Handled Banquet production of 60,000 sq.ft serving up to 2000 guests in a 750 room resort with multiple food outlets and events. Responsible for creation of all menus, recipes, costing, training and implementation. Communicate and work closely with Food & Beverage Director, Banquet team and Catering department. Consistently achieved aggressive annual financial goals in food cost. Effectively controlled labor costs. Demonstrated a high degree of originality and creativity. Built a strong team to meet performance goals.
