Managed sanitation, cGMP, and HACCP programs in beef slaughter, fabrication, and sausage production - Preformed preoperational sanitation; performed E. coli sampling for testing both in-house and external microbial laboratory analysis - Environmental testing of facilities for APC, coliform, and Listeria microbial testing - Wrote or rewrote SOPs, SSOPs, and HACCP plans - Created and managed farmer’s compliance letter program - Performed required critical control point inspections - Managed integrated pest management program - Managed allergen control program - Managed calibration equipment and schedules - Created and managed the food recall system - Managed and audited safety programs - Represented company on third party, customer, and regulatory audits - Maintained quality and HACCP records - Responsible for corrective action/ preventative action for audits
