Daily Duties at The Cheesecake Factory:

• Managed and fully accountable for all balance sheet inputs to ensure restaurant and management team consistently delivered on an aggressive corporate budget of 34% return week over week. Activities included: o Growing sales for the restaurant – sales were at about $6 million in 2006 and have grown to just shy of $10 million o Management, oversight, and negotiation of all procurement activities, including food product, non-food product, and services from newly identified and/or existing vendors o Careful inventory management, including weekly inventory reviews, to ensure quality of product and to reduce waste/loss o Strategic labor management to ensure appropriate forecasting of staffing needs and to meet or beat labor budget o Daily quality review of product to ensure guest satisfaction and adherence to corporate standards o Implementation of a rigorous new hire training program to minimize staff errors, boost customer experience, and reduce waste/loss o Well-planned and effective execution of bi-annual new menu roll-out process o Implementation of tools, job aids, and checklists to help employees perform more effectively and efficiently • Managed a staff of 300+ employees, including a management staff of 11. Activities included: o Management and oversight of all hiring and/or termination decisions o Proactive talent management to ensure development and retention of top performers o Regular coaching/feedback and annual performance reviews for staff members to ensure strengths recognized and opportunities identified o Mentoring, coaching, and helping new General Managers within the region o Planning and execution of new hire and thereafter bi-annual and as-needed staff training plans o Regular food and safety training for all staff to guarantee safe and clean work environment o Thoughtful resolution of HR matters in coordination with corporate HR o Flexible scheduling to ensure managers had time with families and/or outside interests • Interacted daily with guests, vendors, and service providers answering questions in a friendly, timely, and value-add manner, including appropriate response to dissatisfaction or complaints • Consulted with corporate regarding staff questions/needs, guest requests, quality of product, facilities maintenance, equipment needs, product quality, and other issues as necessary • Ensured facilities safe and immaculately maintained
