Daily Duties at Sandals Resorts:

I had to provision the vessel at all times for any situation that might arise as well as cook lunch and dinner no matter what kind of weather or environment we were in for the crew of 6. when sailing from location to location I was required to cook high end meals for the crew no matter how bad and how high the seas were. I had to find whole sale suppliers for the many different situations to deliver food directly to the boat and follow a budget of 9.50 per person for travel agent events and no budget for the events for the owner and his business associates. I did have to give an exact accounting of all monies spent in the galley for all food on a monthly spread sheet using word and excel.

Train and implement training seminars for both front and back of the house employees at all levels, Food and beverage inventory controls with managing and requisitioning of all products to the proper departments and maintaining all products without anyone stealing , Reading and maintaining a P & L statement with budgets and forecasts and staying within and maintaing the companies policies and profit margins, Conveying of all directions of all staffs with a very stable temperament and making all staff members feeling as if whatever their job title is that they are made to feel that they are an important asset the company and they feel great coming to work, I think quick on my feet and when their are problems I focus on the best way of changing the situation as fast and easy as possible without making others feel less competent , Chef, Inventory, Control Systems, Inventory Control, Sourcing, Scheduling, Uniface
