Daily Duties at Veterans Canteen Services :

Oversee all canteen operations: food, retail operations, vending, sales, merchandising, accountability, & misc. services; meet financial operating budgets; and perform a full range of HR mgmt. functions. Successfully developed and maintained a good working rapport with the various services within the Veterans Medical Center. Food Operations: Oversees food operations (food court/cafeteria). Successfully maintained and achieved monthly financial goals. Oversees the preparation and submission of cycle menus incorporating cost analysis which including established food gross. Ensures that daily entrees are cooked in accordance with established VCS cooking standards and are onĀ­ line within prescribed schedules. Oversees food preparation/presentation and servings to ensure portion/quality controls and to maximize sales and minimize waste. Oversees monthly food inventories to verify accountability and food gross. Conducts inquiries to clarify discrepancies or inconsistencies. Oversees stock ordering of all food items. Verifies invoices of all received orders ensuring the accuracy of weights, quantities, quality and grades of ordered stock. Regularly conducts Basic Food List (BFL) inventories and meets established BFL requirements. Oversees stock management and inventory controls, ensuring that all food products and produce are properly stored and/or rotated to assure quality and to prevent out-of-code violations.
