Daily Duties at Theatre Cafe:
Day to day operations that included but were not limited to Opening and closing of restaurant, Bank reconciliations, quarterly menu development and wine list. Reservations system, private party accomadations. Theatre Celebrity show openings that included extensive white glove service with entertainment and theme according to specific Broadway Shows. Hiring and Training of all staff that included both front and back of house skill levels. Analized daily menu features and wine specs for cost effectiveness. Managed staff of 40 employees. Restaurant revenues were seasonally 2.3m. The most important thing this restaurant needed was a new look. Painted and replaced all artwork to coordinate with the Broadway theme and location. Added 40 new seats to inclosed patio area creating a bistro feel. I applied my Executive Chef skills in hiring local rising star chef and co-wrote all menus that included lunch, dinner, brunch and dessert. Staff needed re-training on service procedures and food and wine knowledge. Held daily shift meetings prior to opening with pop quiz's and rewarded sales efforts with show tickets and promotional trade-outs with nearby restaurants. Re-wrote both front and back of house service manuals and added benefit plan to long term employment history
