Daily Duties at Riverbay Seafood Bar And Grill:

Inventory all fish on a daily basis. All fish was iced and portioned daily. I had to track sales of the previous day and compare with fish that was used. I submitted purchase order to GM who ordered the fish from a private purchaser who would go to the market daily. I them recieved the fish and directed the fish cutter on daily needs. there was only one fish cutter and if he was sick or left, I would be responsible to cut the fish. This included 180 pound swordfish to 10oz. sand dabs. There was at least 12 different varieties daily, in addition to 8 different types of oysters. Expedite the line during service. This was a very challenging part of the job. We did 250 covers on a slow night and up to 650 on a busy night. I would call out the orders and put the trays together for the waiters. Each waiter had to pick up their own trays. the waiters were called to the kitchen by beepers. Sometimes the waiters would not come quickly which backed up service. I instituted a food runner system that solved this problem. I was responsible to create standard recipes for use as rotating specials for each different kind of fish. When that particular fish came in, we would use that recipe. I was also responsible to oversee that all the recipes were being followed . This included dinner rolls that were made fresh in the restaurant. I created a new recipe for the New england Clam chowder that turned out to be an award winner. Set-up of fresh fish display in lobby. I used my artistic sense to display the fish in a manner that got diners to order more of the displayed types.
