Daily Duties at Capital Enterprises Inc:

All aspects from site developement operations to HR, legal to cost control and product management. Had to identify new locations and negotiate leases. Had to work with construction companies to get buildings built on time and on budget. Had to ensure district managers were using their time effectively and they were meeting their requirements. Ensure compliance to achieving our cost of sales goals our cost of labor goals and semivariable expenses. Responsible for executing new product roll outs as well as performing local marketing with different organizations. Had to monitor and ensure compliance to all local state and federal laws and regulations including OSHA FMLA Labor regulations. Site Development. I was responsible for identifying new locations in many cases we combined two locations into one so proper site decesions were critical. Our typical lease was 30 years so a bad location could destroy a P-L. After the site was identified I worked with the local authorities to get the site approved. There was normally mulitple agencies that I had to meet their satisfaction. There was normally a parking committee a landscape committee a profile committee (many locations had strict exterior regulations). After all permits were granted I would work with the landlord and our CFO to negotiate the details of the lease to get the lease signed within 30 days. Normally if it took longer than 30 days we would have to get everything approved again. My resposibilities after the lease was signed was to work with the construction company who did all of our building to ensure a time line was set and met for an on time opening. In an effort to save money I dealt with all of the sub contractors that i would end up working with after the opening to ensure equipement was installed properly and working properly. For the opening I had to work out a marketing strategy depending on the time of the year and the seasonalty of the location. In some cases we needed to go heavy others we just needed to turn on the sign. HR: I was responsible for training all employees was completed in a timely manner. The training included basic job functions in addition to sexual harrasement training, EECO compliance, wage and hour requirements. In the event of any unemployment or law suits it was my responsibility to gather all of the information and defend the company. For actual law suits I worked with a local to ensure we had our best defense. I was responsible for all termination of management personal. Cost Controls. I was responsible for managing our cost of sales to within tight guidelines. Any weekly deviation would result in immediate follow up by myself and district manager by first verifying inventory levels then spot checking during the following week(s) to ensure proper procedures were in place. Cost of Labor. It was my responsibility to set labor goals for each of the locations and ensure that the store and district managed their labor to the goals that i set. Product Management. This area was something that needed to be done on a daily basis our product was what customers were focused on. I utilized different reports to identify the stores with issues including but not limited to customer satisfaction results. I would with the district managers to ensure we had a process in place to ensure we were checking on proper procedures from receiving product, holding product, prepping product, cooking product and serving product On a daily basis I would review exception reports to identify possible theft delivery opportunities. On a weekly basis i would review a series of reports to look for inventory cash and labor manipulation by the restaurant management level On a monthly basis i prepared a regional roll up report that was sent to the Owner and President that cover competition, manpower, asset developement and all opportunities within the region
