Daily Duties at The Timbers:

As Executive Chef, I led a team of 17 culinary staff. The menus changed every season and I was responsible for menu development and costing, all hiring and firing of culinary staff, scheduling in all areas, daily production sheets, and ordering and maintaining inventory of product. I maintained a 29-33% food cost in winter season and 25-29% food cost in summer season. We opened The Timbers at Moonlight Lodge in December of 2000. I put together the small wares order, hired and trained kitchen staff, wrote the fine dining, banquet, and bar menus, set up vendor relationships, and created order guides and production sheets. We changed the menu every open season with minor changes occasionally and I adjusted all production sheets, order guides, and vendors accordingly. We had a PPA of $58.00 after our first year. By our second winter, we were booked most nights and by our third year we were booked up to 3 nights out. We continued to grow and I balanced the menu with staples that had helped create our reputation as well as let it evolve with new fresh ideas that other restaurants and chefs quickly picked up on. I was featured in several magazine articles such as Montana Living and Cookie, a national off shoot of Conde Naste. On average, I maintained a 29-33% food cost in the winter season and 25-29% during the summer season. Not easy to do with opening and closing twice a year. For a period of 3 years, I also worked one shift per week as the front of house manager, usually Saturday night. I controlled the front door with regards to seating, walk up and telephone reservations, as well as occasional wine service and clearing of tables to assist the wait staff.
