Daily Duties at Yellowstone Club:

As Executive Sous Chef, I work under and closely to the Executive Chef and led a team of 50-60 culinary staff property wide. On a daily basis, I managed production sheets, daily prep, menu creation for all outlets, catered events, and special events, as well as walked, road, or skied all areas daily as well. On a weekly basis, I scheduled all culinary staff for the main lodge and most gratis areas, and was responsible for all catering events and member and guest in homes property wide. My involvement was key in reducing food cost property wide by over 100% over two seasons, or a 12 month period by creating and implementing streamlined order guides, controlling purchases and inventory, and increasing cross utilization of product between outlets. I also worked hand in hand with our purchasing steward managing purchases, special functions, and inventory for all areas. In addition, I traveled to multiple properties throughout the US and Mexico in the company’s portfolio representing Yellowstone Club to assist with similar member and guest events.
