Complete P&L responsibly of 4 cocktail lounges, to include recruiting, training, purchasing, budgeting and sales total revenues of $8.5 million. Wrote and implemented all training materials, and operational processes. developed central commissary lowering total inventory purchasing by 15% and individual store inventory costs by 10%. Through better in-store purchasing and control guidelines increased profit by 5%. Managed 5 managers and 35 full time staff. Increased revenue by 20% over budget by leveraging entertainment relationships to utilize our spaces for media photo shoots, press events and private parties/banquets.
