Daily Duties at Silver Leagcy Resort Casino:
Management of 5 Supervisors and 100 employees in a 24 hour high volume café-bistro inclusive of culinary presentation, meeting strict safety and sanitation criteria. Responsible for ordering china and glassware, cutlery, daily food and beverage products, as well as restaurant support equipment. Analyze Profit and Loss Statements in conjunction with senior management to control labor levels, inventory, and floor management to meet targets. Coordinate all supervisory and staff schedules for 24 hour 7 day week operation, in line with high traffic periods and special events Established and streamlined documentation, to handle disciplinary issues, vacation and medical leave of absences. Interview all new hires and employ foreign exchange students. Personally handle VIP guest, and coordinate special promotions
