Daily Duties at Za Za Restaurant Group:
Negotiate favorable leases in all locations. Oversee contractors during construction, including plumbing and electrical. Hands on in design and decor of all restaurants to create a comfortable dining atmosphere. All projects were accomplished within forecasted time and budgets. Daily duties include hiring and training of 6 managers and 5 chefs. Overseeing seasonal menu planning and extensive wine lists. Marketing and promoting with new and inventive ideas. Developed an off-premise catering which increased revenues by 15%. Hired and trained kitchen and dining room staff. Designed wine lists having over 500 varietels and rated by wine spectator. Wrote and implemented a training manuel along with holding daily meetings which resulted in a well trained and highly knowledgeable staff. Dealt with all aspects of restaurant to ensure profitability.
