Daily Duties at Casino Arizona:

Restaurant Chef (2008— 2/2011) Oversee the outstanding food and beverage operations for a multi-unit casino with a 450 seat buffet, banquet rooms for 250 people, and an employee dining room for 1,200 employees. Develop and prepare innovative food offerings in a buffet setting that meet and exceed guest expectations. Manage the business efforts of 59 cooks and 6 sous chefs by collaborating to develop new food offerings and provide outstanding (4 diamond) guest service. Maximize organizational profit by planning menus that minimize waste and adhere to quality control procedures. Maintain detailed cost control records to ensure the consistency of cost of food consumed. Procurement Chef (2002—2008) Collaborated with the Food and Beverage Department to identify needs related to goods and services and address these needs in a timely manner. Ensured that goods and services received are consistent with contracts and orders submitted. Utilized outstanding project management experience by completing bid analysis, conducting comparisons with other offered bids, and selecting vendors based on previous service budgets. Supervised the receiving stewards by monitoring product rotation, organization of coolers and freezers, and dating of products being received. Developed an exceptional base of knowledge related to food product offerings by attending key food shows. Sous Chef—Food Production Kitchen (2000—2002) Supervised and worked closely with six cooks in a production kitchen setting. Provided exceptional training and support to employees by collaborating to prepare and produce all foods. Developed new and innovative menus and recipes to diversify food offerings.
