Daily Duties at Onteora Country Club:

1) Staffing and training kitchen employees (placed ads,interviewed, trained, scheduled, directed) 2)menu design for all dining, banquet and event functions (lunch, dinner and weekly special events: kid's night, pub night, lobster night. Banquets and events: all banquets were 150 people plus events, weddings and rehearsal dinners, board member meetings. Private catered events at member homes and at banquet hall. Theater night dinner service and after event services. 3)sourcing vendors (researched, contacted, negotiated terms and pricing) 4)purchasing (responsible for all food items, service contracts and equipment) 5)inventory and product control 6)controlling food and labor costs (invoice management, optimal staffing levels, proper storage of inventory, 7) purchase and maintenance of equipment and service contracts (maintenance and repair of all hoods, ranges, slicers, mixers) tools 8) developed menus for members who wanted private catered events either at home or through renting the banquet hall.
