Daily Duties at The Pace House:
Make lettuce mix and chop Romain for Caesar Salad. fill all salad ingredents: Rasins, Beets,Chick Peas, Cheese Shreaded by hand. A rolling Salad Bar. Make fresh croutons out of old dinner rolls. Bake fresh dinner rolls for service and place in baskets in warmer.Make all salads table side. The Caesar Salad was made the old fashon way. Dressing made from one whole fresh egg anchovies,a clove of raw garlic and olive oil then Pepper from the grinder and fresh shaved Parmesain. Topped ofcoarse with the fresh baked croutons. Those were the days!
