Daily Duties at University Of Surrey, Faculty Of Food Biochemistry, Surrey, Uk:
Conducted research on ‘Mechanisms of lipid oxidation and safety assessment in underutilized fish species’ in collaboration with Malaysia, India, Kenya, Namibia and Ghana with a focus on aiding development of a novel food recipe using under-utilized fish. Laboratory techniques included proximate analysis (moisture, crude protein, crude lipid determination), detailed lipid analysis, Lipid extraction by Bligh and Dyer method, fatty acid profile by gas chromatography, and FT-Raman spectroscopy. Teaching assistant: • Taught approximately 80 Bachelors and Masters students in the areas of biology, food safety and molecular biology, 10 hours per week. • Assisted students with laboratory experiments in food safety, biochemistry and molecular biology. • Corrected papers for biochemistry and practical molecular biology. • Mentored students individually and in groups of four for practical classes and exam preparations in food safety and molecular biology. • Supervised Bachelors, Masters and first year PhD students in food safety and analytical biochemistry.
