Daily Duties at Fine Host Corporation:

Managed all food & beverage for concessions, suites, catering and Ziggurat Business dining facility. Oversaw 300 non-union staff and 10 non-profit groups. Managed relationship with vending contractor with top-line budget of $5.5M. As Executive Chef for Raley Field Sacramento RiverCats, led development (including layouts) for all new concessions stands, commissary, and commissary warehouse. Procured equipment and smallwares. Hired, trained, and supervised culinary, concessions, chef, baker, and service / suite staff; authored training manuals (including HACCP) to ensure ongoing QA / QC and food safety. Created menus and recipes standards for concessions, suites, catering & vending; and new business dining operation at Ziggurat Government building.
