Mis en place all menu items to be prepared from scratch, cut all meat fresh when ordered, designed and printed the menu and recipes that was unique to the Red Vest Inn. Organized and established the SOP for the FOH and BOH, cross trained all personnel, consulted in the design of the restaurant.
