Daily Duties at Copeland's:

I was responsible for all ordering, inventory, food costs, new menu items being posted, helped Exec. Chef, when there was one, with menu planning and handled all daily kitchen responsibilities. I was responsible for up to 6 cooks, 3 sous chefs and 8 expos. As well as coordinating with General Manager for costs of entire restaurant.
