Initially hired as the Executive Chef for the ESPN Zone’s, then promoted to Director; primary focus and accomplishment were on increasing quality of food and beverage, defining and standardizing all operating processes, leveraging corporate resources and benchmarking, and controlling all variable operating expenses. Direct responsibilities included: • Food and Beverage Quality • Kitchen Operations • Retail and Arena Operation • Sourcing and Procurement • Information Technology and Systems • Documentation and Standardization of Operational Processes • Internal and external reviews of site performance • Cost Control
