Louis Marcel Giraud 5112 Maple St Irvine Ca 92612 Home 949 786 9546 Cel 949 2854651 Executive Chef Career I started working Kichens at 16 in France. I did an apprentiship in Saint Raphael France I move to Phoenx Ariz at the age of 20 . I then started working for Mr Nickodemus when He hire me at The Bitmore Hotel (Saucier first year,Sauté Second year Sous Chef third year.1972 to 1976. In 1977 Mr Nickodemus move from Biltmore Hotel to Regitry Hotels He offer me a job then with Him at the Regitry Hotel Scttsdale Ariz ,From there He trasnfer me to he Registry Hotel in Irvine Ca ( 1976 -1981 ) !981 I work for Hilton At the Park for Mr Holger Gantz until 1984 when He move to the Hilton Anaheim. I then competed in the Food Olympic in Germany got two silver metals came back and 1985 Mr Gants transfer me to The Hilton Anaheim as Executive Chef in 1987 Mr Gantz got transfer to San Francisco Hilton where He offer me a job to go with Him. I didn't accepted due to my Children where in School in Irvine and Wife had a Job in Irvine. I then with His recommendation I open the Wittier Hilton where I worked 1985 to 1989 1989 to 1993 I move to Sheraton Long Beach . In1993 to 1999 I move to Visalia Ca where I was offer a position as Executive Chef at the Radisson Hotel and Convention Center ( John Murphy He was the GM) . In 1999 to 2004 I was back in Irvine Ca wen I got offer to fallow Mr Murphy to Tarsadia Hotel Management as corporate Chef which require opening Hotels ,training kitchen employees,making new menus,sanitation orientation on food handlers control food cost and labor coast trained servers,cooks ,dishwashers Etc. In 2004 to 2005 I got an offer (Bernice Korea Human Resources now at the Beberly Hilton Hotel)) to work at the Embassy suites in Anaheim. 2005 I got and offer from Steve Harnold President of Pacifica Hospitality wich i work with at Tarsadia Hotels.
